Getting snow to look "right" is the hardest thing I've ever tried and I've done a lot of snow pictures.
There is no magic formula (if there is, please tell me)
But some things I've learned: If you adjust exposure to keep the snow from burning out then the sky is going to be too dark blue.
Snow is not white. In shadow, it's a pretty strong light blue from reflecting the light of the sky. In the sunlight, it's a very faint dirty yellow from dust and the yellow of the sun.
I used to underexpose a stop when shooting then just try to get the surround the right balance and let snow find it's own color in the picture. That usually didn't work perfect but pretty good. Also, I used to drop green and magenta a bit.
Yes, I know, not real helpful, the main thing is that snow isn't white. Don't try to force it to be white.

I believe it's white to the eye. At least it is in my area. Digital cameras (and film cameras) seem to pick up the blue/cyan hues more than the eye does. You are right about the shadows where you can often see the blue tint under certain conditions, but I always try to make snow look white. In fact the whiter the better since most people will see the blue hue as unnatural and think your WB is off..

Snow have always colour. Warm light - cold shadows. Cold light - warm shadows. Snow is never white. Only places what are white on photos, are overexposed places. How to get it feel right, is another story.
